PaleOMG’s Crockpot Pulled Pork Chili

It’s been a bit chaotic around our house as of late.  A lot of going, very little home time, and maybe a surgery thrown in for variety…maybe…  Thanks to our kick-ass friends (and I mean that both literally AND figuratively…don’t mess with them, they WILL kick your ass), we’ve had some delicious food delivered and it’s most appreciated.  Some of it is going to appear on this blog if I can wrestle their recipes away.  In the times that I’ve been left to fend for myself, though, it’s been a complete and total reliance upon the crock pot.  A crock pot-fest, if you will.  So, when Juli of PaleOMG (paleOMG.com) posted this gem, I rushed to try it right away.  Verdict is/was: BEST.CHILI.I’VE.HAD.IN.MY.LIFE.  Hands-down.  It’s good.

Instead of re-posting the recipe, here’s a link to it on her site: http://paleomg.com/crockpot-pulled-pork-chili/.  You’ll find photos and all the ingredients there.  I will tell you that I’ve now made it four times (and it makes a LOAD of food), and I’ve amended it slightly each time.  For instance, I just use whatever two peppers I have on hand, no matter their color.  I also omit the cayenne, entirely, and it’s still PLENTY spicy (if you aren’t a lover of spicy foods, beware…this one’s VERY spicy and you should consider cutting the spices in half, to start).  Start the recipe and, somewhere between 7-8 hours in, remove the roast from the crock pot, put it in a cake pan, shred it, and then put it back in to cook for 2-3 more hours.  Oh, and use the biggest crock pot you can find (refer back to that “LOAD of food” comment).

I’ve zoned this for ten servings, as we’ve found it’s at least that much in our house.  Adjust accordingly, if you need, but keep in mind that you’ll still need 3(!!) more blocks of carbs to balance this puppy, and that’s a whole lot of food.

This one is really simple, tastes even better left-over, and has been a huge hit at our house.
